Greek Yogurt Breakfast Bark

Here's what you'll need: 

  • 1 1/2 cups plain Greek yogurt
  • 3-4 tablespoons of maple syrup
  • 1/2 cup of granola
  • 3 to 4 strawberries, thinly sliced

Instructions:

  1. Line a baking sheet with parchment paper or a silicone baking mat and set aside. 
  2. Combine the yogurt and maple syrup in a bowl. (Add in more/less maple syrup depending on the level of sweetness you desire.)
  3. Pour the yogurt mixture into the center of the baking sheet, and spread into a thin layer with a spatula.
  4. Top with your sliced strawberries and granola, spreading your ingredients evenly.
  5. Cover the baking sheet with foil and place in the freezer for at least 2-3 hours until completely frozen. 
  6. Break apart into bark and enjoy!
I found this recipe on Go Eat & Repeat as a healthy breakfast alternative when on the run. You can swap out the maple syrup for honey if you desire, and of course add other types of toppings like blueberries, raspberries, shredded coconut, chia seeds and more!
