Monster Cookie Energy Bites
Here's what you'll need:
- 1 1/2 cups of large rolled oats
- 1/2 cup of peanut or almond butter
- 1/3 cup of honey
- 1/4 cup of mini chocolate chips
- 1/4 cup of mini M&Ms
- 1/2 teaspoon of vanilla
Ingredients:
- Mix all ingredients except for the mini M&Ms in a large bowl.
- Once combined, fold in the M&Ms.
- Take out a flat baking sheet and line with parchment paper or a silicone mat.
- Take a small ice cream scoop or melon baller and scoop bite size portions onto the baking sheet. Press each one together with your fingers. (You may need to wash your hands after molding 3-4 of them so the ingredients don't get stuck to your fingers.)
- Refrigerate for 20-30 minutes.
