Pumpkin Spice Granola
Here's what you'll need:
- 2 cups old-fashioned oats
- 3/4 cup sliced almonds
- 3/4 cup roasted pumpkin seeds
- 1/3 cup pumpkin puree
- 1/3 cup maple syrup
- 1 teaspoon vanilla extract
- 1 1/2 teaspoon pumpkin pie spice
- 3/4 teaspoon salt
- 3/4 cup dried cranberries
- Option to add in 1/4-1/2 cup of mini chocolate chip s
Instructions:
- Preheat the oven to 350 degrees and line a large rimmed baking sheet with parchment paper.
- Pour the oats, almonds, and pumpkin seeds into a large bowl, mix together and set aside.
- In a separate bowl, whisk the pumpkin puree, maple syrup, vanilla, spices, and salt together.
- Pour the wet mixture over the oats and nuts, and mix thoroughly to coat.
- Spread the mixture in a thin even layer on the baking sheet and put into the over for 20 minutes.
- After 20 minutes, flip and mix the granola and return it to the oven for another 15-20 minutes. (Careful not to overcook.)
- Once out of the oven, toss in the dried cranberries (and chocolate chips if you choose) and let the granola cool.
- Serve with Greek yogurt, fresh fruit, honey and/or milk.
