Tangy Broccoli Salad
Here's what you'll need:
- 1 large head of broccoli, chopped into small pieces
- ¼ cup of red onion, diced
- ¼ cup of sunflower kernels
- ¼ cup of Craisins
- ½ cup plain greek yogurt
- 1 tablespoon of sugar
- 1½ tablespoons of apple cider (or sub white) vinegar
- 3-4 slices bacon, cooked crisp and crumbled
Instructions:
- Prepare all of the ingredients. (Chop the broccoli, cook the bacon, etc.)
- Combine broccoli, sunflower kernels, raisins, and bacon in a large bowl and set aside.
- Stir together the greek yogurt, sugar, and vinegar in a small bowl to create the dressing.
- Pour the dressing over the top of broccoli mixture and toss evenly to coat.
I had a similar broccoli salad from a corner grocery store at work, and went in search for a homemade recipe because I enjoyed it so much. The recipe I liked most in my search can be found on Belle of the Kitchen. The one above is similar, with a few small changes to taste.
