Cauliflower Fried Rice
Here's what you'll need:
- 1 head of cauliflower, chopped into florets
- 1 small yellow onion, finely chopped
- ½ cup of frozen peas
- ½ cup of carrots, diced
- 2 eggs, beaten
- 1 tablespoon of sesame oil
- ¼ cup of low sodium soy sauce
- 1 tablespoon of light brown sugar
- Pinch red pepper flakes
Instructions:
- Place the cauliflower florets in the food processor and pulse until it starts to resemble rice. Set aside for later.
- Heat a large skillet over medium heat and drizzle in the sesame oil.
- Add your chopped onion, peas and carrots and saute until soft (about 2-4 minutes).
- While cooking the veggie mixture, whisk together the soy sauce, brown sugar, and red pepper flakes. Set aside.
- Push the veggie mixture to one side of the skillet and add in the beaten eggs, scrambling until cooked through. Once cooked, incorporate with the veggies.
- Next up, stir in cauliflower "rice" and and soy sauce mixture and mix well.
- Cook for an additional 3 to 4 minutes, until cauliflower is soft and tender.
I found this recipe on Eat Yourself Skinny and it is a great substitute to a typical carb-heavy fried rice dish. Not to mention, it is equally delicious!
