S'more Energy Bites
Here's what you'll need:
- 1 tablespoon of coconut oil
- 1/3 cup of peanut butter
- 1/4 cup of maple syrup
- 1/2 cup + 1 tablespoon old fashioned oats
- 2 tablespoons of chia seeds
- 1/4 teaspoon of ground cinnamon
- 1/4 cup of graham cracker crumbs (plus more for rolling)
- 1/4 cup of mini chocolate chips
- 1/4 cup of mini marshmallows
Instructions:
- In a large bowl combine the oats, chia seeds, cinnamon, graham cracker crumbs, chocolate chips and mini marshmallows. Set aside.
- In a separate small microwave safe bowl, melt the coconut oil.
- Stir in the peanut butter and maple syrup until smooth.
- Fold the wet ingredients into the dry ingredients and mix well.
- Roll the mixture into 1 inch balls.
- Roll the balls in the reserved graham cracker crumbs.
- Store in the fridge or freezer.
