Focaccia Bread

Here's what you'll need:

  • 3 cups + 3 tablespoons of bread flour
  • 1 heaping tablespoon of sugar
  • 1/2 tablespoon of salt, plus a pinch for the top
  • 2 tablespoons of extra virgin olive oil
  • 1 3/4 cups of warm water 
  • 2 1/2 tablespoons of fresh yeast
  • Fresh rosemary & thyme

Instructions:

  1. Place all of the ingredients together in a mixing bowl, trying to keep the salt and the yeast separate initially.
  2. Mix together either by hand or with a food processor using the dough hook, and knead for about 10 minutes (you should expect a very soft dough).
  3. Leave it to rise to about double its size, then roll out on a well floured surface.
  4. Place in an oiled baking tray and set aside for another half hour to double in size again.
  5. Push holes with your finger tips until they almost touch the bottom of the pan.
  6.  Sprinkle rock salt over the top, and drizzle liberally with extra virgin olive oil.
  7. Bake in a hot oven at 390 degrees for about 16 minutes.
