Sheet Pan Lemon Garlic Tilapia
Here's what you'll need:
- 4 tilapia fillets
- 1 cup of cherry tomatoes
- 1 bundle of asparagus, cleaned and trimmed
- 1/4 cup of melted, unsalted butter
- 4 cloves of minced garlic
- 2-3 tablespoons of freshly squeezed lemon juice
- 1 teaspoon of Italian seasoning
- Olive oil
- Kosher salt and ground black pepper
Instructions:
- Preheat the oven to 425 degrees, line a baking sheet with aluminum foil, and lightly coat with nonstick cooking spray.
- Place the asparagus in a single layer onto one side of the prepared baking sheet. Drizzle with olive oil and generously season with salt and pepper.
- Repeat step 2 but with the cherry tomatoes.
- In a small bowl, whisk together butter, garlic, lemon juice and Italian seasoning.
- Place the tilapia filets in a single layer onto the opposite side of the prepared baking sheet and spoon on the butter mixture.
- Place into oven and bake for about 12-15 minutes.
- Remove from the oven when cooked through, serve and enjoy!
