Zucchini Pie

Zucchini Pie

Here's what you'll need:

  • 3 cups of grated zucchini
  • 2 garlic cloves
  • 1 cup of flour
  • 3 eggs beaten
  • 1/4 cup of vegetable oil
  • 3 tablespoons of shredded parmesan cheese (and a little extra for later)
  • 1 cup of grated provolone or white cheddar cheese
  • 4 fresh basil leaves, chopped finely
  • 1 teaspoon of baking powder
  • Salt and pepper
  • Optional: Add in 1/4-1/2 cup of chopped onion

Instructions:

  1. Preheat the oven to 350 degrees.
  2. Take out a 10-inch pie plate and coat in cooking spray.
  3. Combine all of the ingredients in a large bowl. 
  4. Spoon the zucchini mixture into the pie plate. 
  5. Bake for 45-50 minutes or until golden brown 
  6. Allow to cool for 10-12 minutes and sprinkle with a little extra parmesan cheese before serving!
