Zucchini Taco Boats

Zucchini Taco Boats

Here's what you'll need:

  • 2-3 zucchinis (one whole zucchini typically feeds one person)
  • 1 pound of lean ground turkey meat
  • 1 red pepper, chopped
  • 1/3 can of corn
  • 1/2 cup of shredded mixed cheese
  • 1 tablespoon of garlic powder
  • Salt and pepper
  • Olive oil

Instructions:

  1. Preheat the oven to 375 degrees and cover a baking sheet with aluminum foil. 
  2. Cut the zucchinis in half, and scrape out a bit from the center forming a boat like shape. (If you have a pup, add the zucchini shavings to their dinner so they don't go to waste.)
  3. Place the zucchini boats on the aluminum baking sheet, drizzle with olive oil and set aside. 
  4. Heat a large sauce pan over medium heat. Add in the turkey meat and begin to cook, breaking into smaller pieces as you go.
  5. When almost cooked through, generously season with salt, pepper and garlic powder and stir to combine.
  6. When cooked through, dump the meat into a large bowl and set aside.
  7. Place the large saucepan back on the oven and throw in the chopped red pepper and corn until it sweats.
  8. Toss the pepper and corn mixture and half of the shredded cheese into the ground meat and stir until combined. 
  9. Scoop the meat mixture so that it is overflowing on the zucchini boats, and pop in the oven for about 30 minutes or until browned on the top and boats are easy to cut through. 
  10. Remove from the oven and top with fresh tomatoes, avocado, greek yogurt (sour cream replacement) or anything you'd like!
