Sheet Pan Lemon Garlic Tilapia

Sheet Pan Lemon Garlic Tilapia

Here's what you'll need:

  • 4 tilapia fillets
  • 1 cup of cherry tomatoes
  • 1 bundle of asparagus, cleaned and trimmed
  • 1/4 cup of melted, unsalted butter
  • 4 cloves of minced garlic
  • 2-3 tablespoons of freshly squeezed lemon juice
  • 1 teaspoon of Italian seasoning
  • Olive oil
  • Kosher salt and ground black pepper

Instructions:

  1. Preheat the oven to 425 degrees, line a baking sheet with aluminum foil, and lightly coat with nonstick cooking spray.
  2. Place the asparagus in a single layer onto one side of the prepared baking sheet. Drizzle with olive oil and generously season with salt and pepper. 
  3. Repeat step 2 but with the cherry tomatoes. 
  4. In a small bowl, whisk together butter, garlic, lemon juice and Italian seasoning. 
  5. Place the tilapia filets in a single layer onto the opposite side of the prepared baking sheet and spoon on the butter mixture.
  6. Place into oven and bake for about 12-15 minutes.
  7. Remove from the oven when cooked through, serve and enjoy!
