S'more Energy Bites

S'more Energy Bites

Here's what you'll need: 

  • 1 tablespoon of coconut oil
  • 1/3 cup of peanut butter
  • 1/4 cup of maple syrup
  • 1/2 cup + 1 tablespoon old fashioned oats
  • 2 tablespoons of chia seeds
  • 1/4 teaspoon of ground cinnamon
  • 1/4 cup of graham cracker crumbs (plus more for rolling)
  • 1/4 cup of mini chocolate chips
  • 1/4 cup of mini marshmallows

Instructions:

  1. In a large bowl combine the oats, chia seeds, cinnamon, graham cracker crumbs, chocolate chips and mini marshmallows. Set aside. 
  2. In a separate small microwave safe bowl, melt the coconut oil.
  3. Stir in the peanut butter and maple syrup until smooth.
  4. Fold the wet ingredients into the dry ingredients and mix well. 
  5. Roll the mixture into 1 inch balls.
  6. Roll the balls in the reserved graham cracker crumbs.
  7. Store in the fridge or freezer.
