Lunch Box Special: Easy Egg Salad

Here's what you'll need:

  • 6 hardboiled eggs, shells removed 
  • 1-1.5 tablespoons of yellow mustard
  • 3-4 tablespoons of light mayonnaise
  • 1 dash of garlic powder 
  • Salt and pepper to season

Instructions:

  1. Finely chop up your hardboiled eggs and place into a large bowl. 
  2. Stir in the mustard and mayonnaise until combined. 
  3. Add in the garlic powder, and salt and pepper to taste. 
  4. Serve on a hot piece of toast, on crackers, or with raw veggies!
I had a ton of hardboiled eggs leftover from Easter, and didn't want them to go to waste. I found this recipe on Girl Versus Dough, and it was easy and delicious to throw together in a hurry.
