Honey Garlic Sesame Shrimp
Here's what you'll need:
- 1/3 cup of honey
- 1/4 cup of lite/reduced sodium soy sauce
- 1 tablespoon of minced garlic
- 1-2 teaspoons of sesame seeds
- 1 pound of medium raw shrimp - peeled, deveined and tails off
- 2 teaspoons of olive oil
- 2 cups of cooked brown rice
Instructions:
- Whisk the honey, soy sauce, 1/2 teaspoon of the sesame seeds, and the garlic together in a medium bowl.
- Place the shrimp in a large, close-able plastic bag.
- Pour 1/2 of the marinade mixture in the bag, close and give it a good shake.
- Allow shrimp to marinate in the refrigerator for 15-20 minutes (or for up to 8 hours). Be sure to also refrigerate the other half of the marinade.
- Heat the olive oil in a skillet over medium-high heat.
- Place the shrimp in the skillet, and discard the used marinade. Cook the shrimp on one side until they become opaque and pink (about 1 minute), then flip them over.
- Pour in the remaining marinade and cook until the shrimp is cooked through, for another 1-2 minutes more.
- Remove the shrimp from the sauce in the pan when cooked through, and allow the liquid in the pan to heat through for another 1-2 minutes.
- Serve the shrimp over brown rice, drizzled with the marinade sauce and topped with the remaining sesame seeds. Pairs well with steamed edamame and carrots.
If you are able to plan ahead and marinade the shrimp for a few hours, you won't be sorry. That being said, I use this as a quick and easy weeknight meal frequently, and it has been amazing every time. Thank you to Sally's Baking Addiction for serving this up!
