Sheet Pan Shrimp Boil
Here's what you'll need:
- 2 sweet potatoes, peeled and cut into large quarter moons
- 2 ears of corn, cut into smaller cobs
- 1/4 cup of unsalted butter, melted
- 2 1/2 tablespoons of garlic powder
- 1 tablespoon of Old Bay Seasoning
- 1 pound of medium shrimp
- 1 package of smoked andouille sausage, thinly sliced
- Fresh parsley for garnish
Instructions:
- Preheat your oven to 400 degrees.
- Start a large pot of boiling, salted water.
- Cover a baking sheet with aluminum foil, then lightly spray with cooking spray. Set aside for later.
- Boil your potatoes until just tender, about 10-13 minutes. Stir in the corn during the last five minutes of cooking time, then drain all ingredients well.
- While the potatoes and corn are boiling, prepare the seasoning. In a small bowl, whisk together the melted butter, garlic powder and Old Bay Seasoning.
- Place the drained potatoes and corn, shrimp and sausage in a single layer on the prepared baking sheet.
- Using a basting brush, coat the ingredients with the seasoning butter mixture.
- Bake for 12-15 minutes until the shrimp is cooked through and appears opaque.
- Garnish with fresh parsley and serve (with lots of napkins)!
