Zucchini Pie
Here's what you'll need:
- 3 cups of grated zucchini
- 2 garlic cloves
- 1 cup of flour
- 3 eggs beaten
- 1/4 cup of vegetable oil
- 3 tablespoons of shredded parmesan cheese (and a little extra for later)
- 1 cup of grated provolone or white cheddar cheese
- 4 fresh basil leaves, chopped finely
- 1 teaspoon of baking powder
- Salt and pepper
- Optional: Add in 1/4-1/2 cup of chopped onion
Instructions:
- Preheat the oven to 350 degrees.
- Take out a 10-inch pie plate and coat in cooking spray.
- Combine all of the ingredients in a large bowl.
- Spoon the zucchini mixture into the pie plate.
- Bake for 45-50 minutes or until golden brown
- Allow to cool for 10-12 minutes and sprinkle with a little extra parmesan cheese before serving!
