Cheesy Cauliflower Tots

Here's what you'll need:

  • 2 cups of cauliflower florets
  • 1 egg
  • 1/4 cup of chopped red bell pepper, chopped
  • 1/2 cup of shredded cheddar cheese
  • 1/8 cup of grated Parmesan cheese
  • 1/4 cup of panko breadcrumbs
  • Kosher salt and black pepper to taste
  • Cooking spray

Instructions:

  1. Preheat the oven to 375° degrees.
  2. Spray a baking sheet with cooking spray and set aside.
  3. While the oven is heating, steam the cauliflower florets until fork-tender.
  4. Once the cauliflower is steamed, pulse in a food processor until coarsely grated.
  5. Combine all of the ingredients in a large bowl.
  6. Form the tots into any shape you'd like and place on the baking sheet. Note: They will not expand in the oven.
  7. Bake for 10 minutes, then flip the tots over. Bake for an additional 10 minutes, or until golden brown.
These delicious, cheesy tots are brought to you by Cooking Light. I only made one modification which was removing the cilantro.
