Cheesy Cauliflower Tots
Here's what you'll need:
- 2 cups of cauliflower florets
- 1 egg
- 1/4 cup of chopped red bell pepper, chopped
- 1/2 cup of shredded cheddar cheese
- 1/8 cup of grated Parmesan cheese
- 1/4 cup of panko breadcrumbs
- Kosher salt and black pepper to taste
- Cooking spray
Instructions:
- Preheat the oven to 375° degrees.
- Spray a baking sheet with cooking spray and set aside.
- While the oven is heating, steam the cauliflower florets until fork-tender.
- Once the cauliflower is steamed, pulse in a food processor until coarsely grated.
- Combine all of the ingredients in a large bowl.
- Form the tots into any shape you'd like and place on the baking sheet. Note: They will not expand in the oven.
- Bake for 10 minutes, then flip the tots over. Bake for an additional 10 minutes, or until golden brown.
