Mama Szabo's Baked Italian Sandwiches

Here's what you'll need:

  • 2 (8 ounce) packages refrigerated crescent dinner rolls
  • 1/2 pound deli salami, sliced 
  • 1/2 pound deli provolone cheese, sliced 
  • 1/2 pound prosciutto
  • 7 eggs
  • 1 cup grated parmesan cheese
  • 2 (6 ounce) jars spicy roasted red peppers, drained

Instructions:

  1. Heat oven to 350°F.
  2. Spray a 13x9 inch glass baking dish with cooking spray.
  3. Unroll one package of crescent rolls and use them to line the bottom of the dish, seaming the dough together with your fingers. 
  4. Use half of the salami and prosciutto and add a layer off meat on top of the crescent rolls.
  5. Next, add a layer of provolone cheese.  
  6. Lightly beat 6 of the eggs with the parmesan. 
  7. Pour half of the egg mixture over top of the deli meat and cheese.
  8. Top this layer with half of the red peppers.
  9. Repeat layering the remaining salami, prosciutto, provolone, egg mixture and peppers. 
  10. Top with remaining package of rolls.
  11. Lightly beat the 1 remaining egg and brush over top.
  12. Cover dish with foil and bake for 30 minutes.
  13. Uncover and bake for another 30 minutes.
  14. Cool 1 hour; cut into 32 squares and serve.
This is one of Mama Szabo's favorite quick and easy appetizers. This one was inspired by Food.com's recipe, with a substitute ingredient or two to add a little kick.
