Sweet Potato Toast Tacos

Here's what you'll need:

  • 2 boneless, skinless chicken breasts
  • 1 jar of red salsa (spice level of your choosing)
  • Salt, pepper and garlic powder
  • 2 sweet potatoes 
  • 1 avocado, diced 
  • 1/4 cup of finely shredded cheddar cheese 
  • 1/3 cup of black beans

Instructions:

  1. Preheat the oven to 375 degrees and spray a small baking pan lightly with cooking spray.
  2. Place the chicken breasts in the baking pan and season generously with salt, pepper and garlic powder. 
  3. Scoop a heaping spoonful of salsa onto each chicken breast and spread into a thin layer.
  4. Bake for 15-20 minutes and remove when the internal temperature reads 165 degrees.
  5. Allow the chicken to cool, shred with a fork, and set aside.
  6. Cut the tips of the sweet potatoes off and slice lengthwise into 1/4 inch pieces.
  7. Pop the slices of potato in the toaster 2-3 times on high heat, and remove when you see small brown spots.
  8. Lastly build your tacos. Take one slice of sweet potato toast and top with shredded chicken, black beans, avocado and cheese. Enjoy!
This recipe came from Little Bits of... and it was easy, healthy and delicious! You can also top with plain greek yogurt, corn or diced tomatoes.
