Cauliflower Fried Rice

Cauliflower Fried Rice

Here's what you'll need:

  • 1 head of cauliflower, chopped into florets
  • 1 small yellow onion, finely chopped
  • ½ cup of frozen peas
  • ½ cup of carrots, diced
  • 2 eggs, beaten
  • 1 tablespoon of sesame oil
  • ¼ cup of low sodium soy sauce
  • 1 tablespoon of light brown sugar
  • Pinch red pepper flakes

Instructions:

  1. Place the cauliflower florets in the food processor and pulse until it starts to resemble rice. Set aside for later.
  2. Heat a large skillet over medium heat and drizzle in the sesame oil.
  3. Add your chopped onion, peas and carrots and saute until soft (about 2-4 minutes).
  4. While cooking the veggie mixture, whisk together the soy sauce, brown sugar, and red pepper flakes. Set aside. 
  5. Push the veggie mixture to one side of the skillet and add in the beaten eggs, scrambling until cooked through. Once cooked, incorporate with the veggies.
  6. Next up, stir in cauliflower "rice" and and soy sauce mixture and mix well. 
  7. Cook for an additional 3 to 4 minutes, until cauliflower is soft and tender.
I found this recipe on Eat Yourself Skinny and it is a great substitute to a typical carb-heavy fried rice dish. Not to mention, it is equally delicious!
