White Bean Turkey Chili
Here's what you'll need:
- 2 small onions, chopped
- 5 garlic cloves, chopped
- 2 teaspoon of chili powder
- 1 bay leaf
- 1/2 tablespoon of cumin
- 1/2 tablespoon of oregano
- 2 teaspoon of red pepper flakes
- 3 pounds of lean ground turkey
- 4 16-ounce cans of cannellini beans, rinsed and drained
- 2 cups of fat free chicken broth
- 1/2 cup of fat free sour cream or greek yogurt
- Salt and pepper
Instructions:
- Heat a large pot over medium heat. When hot, spray with cooking spray generously.
- Add the onions and garlic to the pan and saute about 5 minutes.
- Add in the meat and cook for 5 minutes, breaking it up until white.
- Add in the salt, chili powder, cumin, oregano, bay leaf and red pepper flakes. Cook for another few minutes.
- Add in the beans and broth and cook uncovered for about 10 minutes.
- Lower heat and cover, simmer for about 45 minutes and be sure to mix occasionally.
- Add sour cream and cook for 5 more minutes. Adjust seasoning and salt to taste.
- Top with shredded cheddar cheese if desired!
