Ranch Turkey Burgers, Corn Pico and Pineapple
Here's what you'll need:
- 1 pound of lean ground turkey (makes four small burgers)
- 1/2 packet of dry ranch mix
- 1 tablespoon of garlic powder
- 1/4 cup of red raw onion, finely chopped
- 1/4-1/2 cup of canned corn
- 1/4 cup of cherry tomatoes, halved
- 5-7 thick slices of fresh pineapple
Instructions:
- Prepare the meat for the grill and combine the ground turkey, dry ranch mix and garlic powder in a large bowl.
- Form the meat into four small patties (or too your desired size).
- Cook these on the grill until the internal temperature reaches 165 degrees. (Cooking the pineapple slices at the same time so that you get nice grill marks on both sides.)
- On the side, combine the chopped red onion, corn and cherry tomatoes in a small saucepan - and heat to over the stove for a few minuets just to combine the flavors.
- Mash up an avocado and spread a thick layer onto the top of the burger.
- Top with the "corn pico" and enjoy with the grilled pineapple.
