Lunch Box Special: Easy Egg Salad
Here's what you'll need:
- 6 hardboiled eggs, shells removed
- 1-1.5 tablespoons of yellow mustard
- 3-4 tablespoons of light mayonnaise
- 1 dash of garlic powder
- Salt and pepper to season
Instructions:
- Finely chop up your hardboiled eggs and place into a large bowl.
- Stir in the mustard and mayonnaise until combined.
- Add in the garlic powder, and salt and pepper to taste.
- Serve on a hot piece of toast, on crackers, or with raw veggies!
I had a ton of hardboiled eggs leftover from Easter, and didn't want them to go to waste. I found this recipe on Girl Versus Dough, and it was easy and delicious to throw together in a hurry.
