Tangy Broccoli Salad

Tangy Broccoli Salad

Here's what you'll need:

  • 1 large head of broccoli, chopped into small pieces
  • ¼ cup of red onion, diced
  • ¼ cup of sunflower kernels
  • ¼ cup of Craisins
  • ½ cup plain greek yogurt
  • 1 tablespoon of sugar
  • 1½ tablespoons of apple cider (or sub white) vinegar
  • 3-4 slices bacon, cooked crisp and crumbled

Instructions:

  1. Prepare all of the ingredients. (Chop the broccoli, cook the bacon, etc.)
  2. Combine broccoli, sunflower kernels, raisins, and bacon in a large bowl and set aside.
  3. Stir together the greek yogurt, sugar, and vinegar in a small bowl to create the dressing.
  4. Pour the dressing over the top of broccoli mixture and toss evenly to coat.
I had a similar broccoli salad from a corner grocery store at work, and went in search for a homemade recipe because I enjoyed it so much. The recipe I liked most in my search can be found on Belle of the Kitchen. The one above is similar, with a few small changes to taste.
