Fluffy Sheet Pan Pancakes

Here's what you'll need:

  • Pancake batter mix (and any accompanying ingredients it calls for on the box)
  • Pam cooking spray
  • 1 sliced banana, 1 cup of sliced strawberries, 1/4 cup of chocolate chips (or any other sliced fruits or nuts you'd like to have in your pancakes like blueberries, walnuts, etc.).

Instructions:

  1. Preheat your oven to 425 degrees. Line a 18x13 inch rimmed baking pan with aluminum foil and spray with non-stick cooking spray. Set aside.

  2. Prepare your pancake batter according to the package. You'll want to double the recipe on the mix (which calls for 2 cups of dry mix) in order to fill up the baking pan. 

  3. Pour your pancake batter evenly into the pan. Add your sliced bananas, strawberries and other preferred ingredients into the batter. (Careful not to overcrowd, keep the ingredients spread out.)

  4. Place the pan into the oven and bake for 11-14 minutes, or until it looks fluffy and lightly browned on the top.

  5. For a more crisp, browned top - flip your broiler on low for a minute or two. Careful to watch it so you don't burn or char the edges. 

  6. Remove from the oven and let it completely cool. Cut into squares with a pizza cutter and serve!

I found this recipe from Hello, Wonderful and it is my new go-to when we have guests for breakfast, as you don't need to spend your morning slinging pancakes two at a time.
